Salted Cocoa Pecan Pie Truffles
Perfect for a sweet snack or a lighter dessert, these salted cocoa pecan pie truffles are a healthier take on traditional pecan pie. Composed mostly of Medjool dates, pecans, and cocoa powder these truffles are a good source of B vitamins, iron, antioxidants, and fiber. A treat you can feel good about enjoying!
Dates can be found in the produce section at the grocery store because they are technically considered fresh. After picking they quickly dry out naturally. Dates with pits in them are often softer than pre-pitted dates. Removing the pits yourself may be an extra step, but totally worth it.
2 cups dates, pitted 1 cup pecans (chopped or pieces) 1/3 cup cocoa powder, plus extra for dusting 2 tsp agave syrup 1 tsp vanilla 1/2 tsp kosher salt
Place all ingredients in food processor and pulse until a crumbly mixture is formed. Using a tablespoon, scoop out some of the mixture and form it into a ball between your hands by pressing it together and gently rolling in your palm. Place a few spoonfuls of cocoa powder in a small bowl. Roll truffles in cocoa powder to lightly dust the surface of each truffle. This keeps them from sticking together and also amps up the cocoa flavor. However, be sure to not over dust as too much cocoa powder will make the truffles bitter. Set finished truffles aside on a serving plate or in a dish for storage.
